Drumsticks are a properly underappreciated cut with a great bone to meat ratio, which means flavour from top to bottom. Ours come from free range birds that spend their lives on their legs, so the meat is firm and full of flavour rather than soft and bland. Marinated in soy, honey and mustard - salt, sweetness and a bit of sharpness, which is everything a drumstick wants. Roast or barbecue, turning regularly until caramelised and cooked through.
