Our pork chump steaks in a proper jerk marinade - scotch bonnet, allspice, thyme, ginger and spring onion. Jerk is a big, aggressive marinade and it needs a cut with enough fat and flavour to carry it, which is exactly what the chump is. The fat renders out in the pan or over coals and bastes the meat as it goes. Cook hot, rest well, and serve it slightly pink in the middle.
