Gochujang Pork Steak

Gochujang is the fermented Korean chilli paste and it's one of the great marinades for pork - sweet, savoury, fermented and warm rather than sharply hot. It caramelises hard in the pan, which is exactly what you want against the fat of our pork chump steak. Cook it over a decent heat, watching it doesn't catch, and rest it well. Serve with rice and something pickled to cut through.
