Traditional Lasagne

Our lasagne is built the long way round. We start with our own grass fed beef mince, browned off properly and then cooked down slowly with soffritto, tomato and red wine until the sauce is rich and glossy. That gets layered with pasta and a proper béchamel, made with butter and milk and nothing else. Everything is prepared in small batches in our butchery kitchen. Nothing is added that doesn't need to be there. Straight into the oven from the fridge and served with a green salad, it's the best kind of weeknight supper.
