Pork, Cider and Mustard Casserole

A West Country classic done properly. Our pastured pork is diced, browned off and then braised slowly in cider with onions, mustard and cream until the meat is tender enough to pull apart with a spoon. Pork and cider is one of those pairings that just works, the sweetness of the apple cutting through the richness of the pork. Warm it through gently and serve with mash and something green.
