Our cottage pie starts with our own dry aged grass fed beef mince. We brown it off and then cook it slowly with carrots, onions and celery, tomato paste, Worcestershire sauce and a good beef stock, until it has that deep savoury richness you only get from time. Topped with mashed potato and baked. Slow grown native breed cattle give a mince with far more flavour than anything commercially reared, and in a dish this simple that's the whole difference.
