Beef Bourguignon

The great French braise, made with our grass fed beef. Slowly cooked in red wine with bacon lardons, button mushrooms and baby onions until the beef is meltingly tender and the sauce has reduced to something rich and glossy. We use our own nitrate free bacon in this, which brings a depth you simply don't get from commercial lardons. Warm through gently, and serve with mashed potato or good bread to mop the sauce.
