All the work of a Sunday roast, none of the timing. We cook our grass fed lean roasting beef slowly under vacuum at a low, precisely controlled temperature, which means it comes out evenly pink from edge to edge with none of the grey band you get from an oven. Because it's already cooked, all you need to do is warm it through and give it a hard sear in a hot pan to build a crust. Rest it well and carve across the grain.
